The Paddlefish Caviar resembles the Sevruga grade of the Caspian Sea although this caviar can be slightly smaller. This caviar ranges in color from dark amber to a dark gray, with a complex body, good salinity and subtle brine flavor.

In the rivers of Tennessee and Illinois live the Hackleback Sturgeon. Hackleback Caviar is black with a soft, mild, light buttery taste and an ocean finish.
