The Bourbon
Every cask has been a decade in the making. Distilled from a high-rye mash bill (60% corn, 36% rye, 4% malted barley) and aged ten years in rare Seguin Moreau barrels from one of France’s most revered cooperages, the bourbon is shaped by time, pedigree, and oak.  The tight-grain staves and signature medium-plus toast coax out layers of baking spice, vanilla bean, toasted nuts, refined tannins, dark dried fruit, cocoa, and subtle notes of leather.

The BCS team created this unique blend by selecting a diverse set of whiskeys sourced from both the United States and Canada, with some barrels aged for as long as 25 years. Each of these whiskeys was then meticulously finished in a distinct rum cask originating from one of three Caribbean nations—Jamaica, Barbados, or St. Lucia—imparting unique tropical and molasses-driven characteristics to the spirit. After the individual finishing processes were complete, the team skillfully blended the various components, harmonizing the bold spice of the whiskey with the rich, exotic sweetness of the rum casks to create a complex and layered final expression.

We were just in Kentucky and picked a Peerless barrel!!!
TWCP got a VIP tour with John Wadell, head taster at Peerless. He selected 6 very special barrels for us to try. Not your ordinary barrel picks where they just randomly select barrels, he selected 6 barrels that he deemed were the best barrels and slated to be Single barrel releases to sell at Peerless' gift shop. All of these barrels will be single barrels they will sell at Peerless except the one we picked!!!!!! We got to pick the best of the bunch and the other 5 will be sold at their shop.

We named our barrel Sweet Meat BBQ

New Riff Distilling continues our exploration of heirloom grains with one of the great traditions of Kentucky whiskey: wheated Bourbon. Departing from our usual high-rye bourbon mashbill, we turn to Red Turkey Wheat, an heirloom variety grown in the American Midwest, not bred for yield but for flavor. A classic 19th-century grain, Red Turkey Wheat brings a soft, sweet profile to this wheated Bourbon. First released in 2021, we were so pleased with the results that it has now earned a wider release, making this distinctive whiskey more broadly available. Aged for five years, this whiskey opens with aromas of orange marmalade, cotton candy, and warm bread, followed by a citrusy brightness, light nuttiness, and a smooth, grain-forward finish. New Riff Red Turkey Wheat is softer and sweeter than our typical high-rye expressions, showcasing the diversity and range of our whiskey making.

Unlike most wines in this category, Lucien Le Moine’s Bourgogne Rouge is sourced from village vineyards in the Côte D’Or, resulting in a serious, structured wine. We recommend decanting it 30 minutes ahead. Deep, ruby color leads to a rich and complex nose of black cherries and earth, with intense fruit flavors and an endless finish. The tannins are rich but supple, polished by nearly two years’ aging in wood. A brilliant Bourgogne Rouge – it transcends the category. Excellent now with braised meats and rich cheeses, it will also improve for many years in the cellar.
