Ingredients : Water, Barley malt (60%), Raw wheat (40%), Sour cherries & raspberries (minimum 35%)

This specific Hommage macerated for 2.5 months. The final fruit intensity is 323 g/L, delivering rich, tart berry character. The beer is unfiltered, unpasteurized, and bottle-conditioned using traditional lambic methods, matured in oak, and intended to express natural fermentation and terroir of the Zenne Valley.  This is a beautifully crafted, heavily fruited lambic in the Hommage tradition — a tart, deeply complex beer that's well-suited to long aging (with a best-before of 2039!). The “Oogst” 2019 version appears to focus even more on showcasing the harvest character of the raspberries and cherries, balanced by aged lambic's funk and acidity.

Lambic is brewed from 60% barley malt, 40% unmalted wheat, hops and water. This is Blend No. 85 of the season and was bottled on December 1, 2020. It marks the first 750 ml release of Doesjel since 2006. This is a classic lambic with no fruit. It is a flat lambic (non-sparkling, unblended geuze) — a rare treat for lovers of aged spontaneous beer

ABOUT THE ARTIST

2023 release of Heigold Single Barrel features the work of Quincy Sutton, a Los Angeles-based illustrator who was selected to create six original pieces to adorn our bottles. The deeply colored and glass-staining 2022 Château Giscours is packed with cassis, black cherries, violets, and graphite-like aromatics. Medium to full-bodied, it’s concentrated and intense, with beautifully ripe tannins, a pure, graceful mouthfeel, and a long, structured finish. There’s serious depth here, and while it already shows remarkable balance, I suspect it will shut down for a period before emerging as a classic Margaux a decade or so after the vintage. This beauty is going to be long-lived, and you can expect at least 30-40 years of prime drinking. Based on 64% Cabernet Sauvignon, 30% Merlot, and equal parts Petit Verdot and Cabernet Franc, it’s a serious, age-worthy Giscours. Tasted multiple times with consistent results.

Our favorite recipe is the old Morel Mushroom Pasta from Balaban's!  

Whether you're a seasoned mushroom aficionado or curious to try them for the first time, supplies are limited, and morels have a very short season – so if you've been waiting all year, now’s the time to grab them.

Pasta with Morel Mushrooms, Heirloom Tomatoes & Bufala Mozzarella
Serves: 4
Prep Time: 15 mins
Cook Time: 25 mins
Ingredients:

• 12 oz Bottega Ditalia pasta (e.g. spugnole or rustichelle would work best)*
• *1 cup fresh morel mushrooms, cleaned and halved
• 1½ cups chopped heirloom tomatoes, halved*
• 1 ball Salvatore Corso Bufala Mozzarella, torn into pieces*
• 2 tbsp Isigny de Mere Buerre Baratte (butter)*
• 2 tbsp extra virgin olive oil*
• 2 cloves garlic, thinly sliced
• 1 tsp fresh thyme leaves
• Sea salt & freshly ground black pepper, to taste*
• Zest of 1 lemon (optional)
• Fresh basil, for garnish

*Ingredients available at Olive Ovation/The Wine & Cheese Place Instructions:
Cook the pasta:
Bring a large pot of salted water to a boil. Cook pasta until just al dente. Reserve 1 cup of pasta water, then drain.
Sauté the morels:
In a large skillet, heat butter and olive oil over medium heat. Add sliced garlic and cook until fragrant, about 30 seconds. Add morel mushrooms and thyme. Cook for 5–7 minutes until tender and golden. Season with salt and pepper.
Add tomatoes:
Toss in the heirloom tomatoes and sauté for 2–3 minutes, just until they begin to soften and release their juices.
Combine:
Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss everything together until well coated and glossy. Adjust seasoning and add lemon zest if using.
Finish with mozzarella:
Off the heat, gently fold in torn pieces of bufala mozzarella. Let the cheese melt slightly from the residual heat of the pasta, creating creamy pockets throughout.
Plate & garnish:
Divide into warm bowls, drizzle with olive oil, top with fresh basil, and a bit more cracked pepper. Serve immediately.Pairing Suggestion:
