A boldly flavored whiskey treat made with 100% High West Pot Still Rye. Made in accordance with the standards laid out by the Bottled in Bond Act of 1897, it’s a whiskey that does everything right. One base spirit, crafted at a single distillery, by a single distiller, in a single distilling season. Must be aged a minimum of 4 years and bottled at 100 proof in a federally bonded warehouse.

What is Bottled in Bond:
  • It must be the product of one distillation season (January–June or July–December) from a single distillery.
  • Aged for at least four years in a federally bonded warehouse.
  • Bottled at exactly 100 proof (50% ABV).
  • The label must state the distillery where it was made and, if different, where it was bottled.
These regulations ensure consistency and quality, stemming from the 1897 Bottled-in-Bond Act.

Our Christmas Ale is a brown ale that is brewed with six types of malted barley and fermented with American Ale yeast. It is brewed with pale malt as well as a combination of Caramel, Biscuit, Munich, and chocolate malts. It is hopped and dry-hopped with Columbus, Cascade, Centennial, and Amarillo and has a nice piney and citrus hop flavor and aroma. The result is a flavorful brown ale that is sweet and malty with a pleasant hop aroma.

Aged in 50% new and 50% second-use American Oak from the Duncan family's The Oak cooperage in Higbee, Missouri. Matt Duncan joined me for my tasting, and he says the Petit Verdot in the blend, of which there is 0.4%, is co-fermented with the Cabernet Sauvignon, intended to bring focus to the Cabernet fruit. A compelling, brooding, muscular rendition of Cabernet from Alexander Valley with gorgeous boysenberry notes, black currants, and rose petals laced with vanillin notes and toasty oak. Medium to full-bodied with black currants, ripe blackberry and black cherry notes framed by velvety tannins laced with that irresistible vanillin note. Toasty oak spices lend a hint of sweetness, balanced by grippy acidity. Long and complex, revealing umami, garrigue, and crushed slatestone on the finish. It's a terrific wine from the Alexander Valley.

2021 Spottswoode Cabernet Sauvignon 40th Anniversary...$279.99
Pure black currants on the nose with an incredible al dente grape character. It’s almost like grape must. Undertone of ink and violets and sandalwood. Perfumed. Hints of spearmint. Full-bodied, but so well-formed and reserved. A touch of mint on the palate with dark fruits. It is very complete and reminds me of the classy Spottswoode 2001. I keep being impressed with the purity of fruit with the earthy undertones and stones. Savory. A fitting 40th anniversary wine. 90% cabernet sauvignon, 7% cabernet franc, and 3% petit verdot. Best after 2027.

Slated for a September 2024 release, Spottswoode's 2021 Cabernet Sauvignon comes across as more vibrant, floral and fresh than the 2020. Violet and cassis notes are accented by hints of crushed stone and pencil shavings on the nose. Hugely complex yet harmonious, this medium-bodied effort is firm but silky in feel, with a long, elegant finish. Lovely stuff.

A bouquet of rich caramel, vanilla bean, and toasted oak, balanced by an underlying sweetness of dark fruits, like dried cherries or figs. This bourbon is rich and full-bodied, with flavors of dark chocolate, toffee, and brown sugar taking the forefront.  The finish is long and warming, with lingering spice, toasted oak, and a slight smokiness. This third release has been created using an expertly balanced combination of three cask types – first-fill sherry seasoned American and European oak casks and a smaller quantity of refill casks for balance and depth. Using a higher proportion of Orkney peated malt, our Master Whisky Maker, Gordon Motion, has achieved an intensely smoky character, coming through first on the nose with aromas of smouldering peat and lightly charred oak, balanced by honey-glazed lemons and crushed aniseed.

J.H. Cutter represents the finest tradition of A.P. Hotaling’s heritage of blending and bottling the finest American Whiskies worthy of the Hotaling name. The J.H. Cutter name and bottle are inspired by the original J.H. Cutter Whisky, which was a product offered by A.P. Hotaling & Co. in the mid to late 1800s. Anson P. Hotaling arrived in San Francisco during the California Gold Rush, but like the vast majority, failed to make his fortune as a gold miner. After working for a local liquor merchant, Hotaling found his true calling and opened his San Francisco wholesaler liquor business in 1865, under the name “A.P. Hotaling & Co.” A.P. Hotaling was the largest liquor wholesaler on the West Coast in the late 1800s, and the Hotaling warehouse in San Francisco famously survived the earthquake and fires in 1906. J.H. Cutter Whisky was one of Hotaling’s flagship brands and was a blend of some of the finest whiskies from the best producers in Kentucky and other parts of the United States. Today’s J.H. Cutter blend brings together three whiskies to achieve maximum complexity and includes 73% sourced bourbon from Kentucky Bourbon Distillers, 17% Old Potrero 18th Century Style Rye Whiskey, and 10% Old Potrero Port Finish Rye Whiskey. Inspired by the original packaging, today’s bottle is amber with an A.P. Hotaling & Co. emboss, replica topper and an antique silver-colored capsule. 48% ABV
