Finished in Oloroso Sherry Casks and aged in Hillrock's Solera, the slight cinnamon aromas are surprising along with the oaked caramel-vanilla and floral, fruit notes in the nose of this golden amber bourbon. Sweet, yet spicy full-bodied flavors are warm with maple syrup, brown sugar, molasses, toffee, roasted corn, and raisin notes on the palate are balanced by spicy notes of clove and cinnamon. The medium to long warm finish abounds with sweet caramel and butterscotch. Familiar characteristic of Oloroso sherry flavors of walnut, fig and candied fruit balance the spicy rye undertones.
Hillrock Solera Aged Bourbon marries Hillrock Estate Bourbon with a mature seed bourbon that was carefully sourced by Pickerell. After cascading through the solera, Hillrock Solera Aged Bourbon is finished in 20 year old Oloroso Sherry casks. The finishing process balances the spicy rye flavors of the bourbon and adds further complexity, with layers of fig, roasted walnuts and candied fruit. The current age of Hillrock Solera Aged Bourbon is over six years and the rye content is approximately 37%.

Hillrock Double Cask Rye is a unique American whiskey, handcrafted in small batches from 100% estate rye, which has been naturally grown, small batch pot distilled, aged, and bottled all on our Hudson Valley Estate. After aging in new #3 char American oak casks, the award-winning whiskey is then aged in #4 char new American oak casks which add layers of caramel and vanilla to complement traditional rye spice. The Double Cask Rye’s deep golden amber color is highlighted by warm and inviting aromas of vanilla and caramel with hints of prune, apricot and rye spice round out the nose. Initial caramel sweetness on the palate is followed by mint, clove, and cinnamon spices before fading to a caramel, butterscotch conclusion with a long, warm and sweet finish.

Barrel: Pooles Hill 2017 Harvest (PH-OPX)
Floor malted, small batch distilled, and aged in charred American Oak, ex-Bourbon and Sherry Casks, this outstanding whiskey is made from Estate grown barley that is traditionally floor-malted & smoked in our on-site Malthouse with imported peat from Scotland for approximately 16 hours prior to distillation, creating a uniquely delicate and complex whiskey. Notes of crème brûlée and shortbread with caramelized orange and heather on the nose open to a balanced and smooth palate faint with citrus notes, but rounded with toffee, dried fruit, cinnamon and clove. The very long and slightly dry finish has a delicate, smokiness which lingers in this bright, honey amber whiskey.
