The limestone and flinty siliceous soil impart somewhat of a gun-flinty quality on the nose. On the palate, the attack is fresh and supple with great volume and complexity mid-palate.
The minerality in this Pouilly Fume pair nicely with shrimp and other creamy seafood or pasta dishes as well as with pesto crostini or herbed goat cheese appetizers. It also pairs well with baked ham or even a ham sandwich with mustard…preferably French;)
