Julien Schaal - Grand Cru Alsace!

New and exciting GRAND CRU ALSACE 

A common passion for Alsace Grands Crus wines.
The Biecher & Schaal winery has been created in 2011 as a result of a joint venture between Olivier Biecher & Julien Schaal . Both share the same passion fo great Grands Crus in Alsace.
Olivier Biecher, owner of the eponymous wine negociant company, from a long time wanted to smell again the aromas of wine in is familly historic cellar .
Julien Schaal became a winemaker as a result of passion - as opposed to family background. From his first vintage in Alsace in 1999, he has apprenticed with a number of the world's foremost winemakers for several years in Burgundy & Rhône valley but Also South Africa & Libanon. He has introducing his own wines in 2004 and still produce wine in South Africa 
Sophie Bollaert has joint the team in 2013. Graduated as winemaker from Burgundy university, her commitment the entire produce has no limite. From orgenizing the harvest , though the winemaking and bottling , she is also an ambassador of our wines.




A cellar dedicated to Grands Crus wines.
In a 18th century well renovated cellar in the historic village of Saint Hippolyte, the new cellar has been launch with the vintage 2011 and his one of most beautiful cellar dedicated to the production of Alsace Grands Crus.
All the grapes comes exclusively from Alsace Grand Cru classified vineyards. All picked by hand, the grapes are carefully sorted and gently goes to the pneumatic press. A long pressing of a minimum of 12 hours is necessary to extract the best juice possible without pushing to far.
After decantation at low temperature, the juice start a long alcoholic fermentation that can take up to 4 months.
No sulfur is added before the next spring and this to let the wine to open up as much as possible. The result is a wine with less sensitivity to oxidation and much more aromatic.  All our Riesling are dry.

A gently flinty nose with a spicy edge, as well as fine, floral perfume and bright limes and apples. The palate has a fine, sleek and even-paced feel with a light, crisp finish. Drink now.

A tropical overtone of candied pineapple on the nose of this wine promises opulence and richness, while a tinge of bergamot intensifies the exotic impression. The concentrated palate brims with pineapple and canned peach but remains pristine, dry and even racy despite all this richness that reflects the heat of the 2018 summer. This wine is rich, dry and fresh in equal measure. Drink now–2035

2018 Julien Schaal Riesling Rosacker Grand Cru....$34.99
This is very beautiful with lime, stone and green-melon character. Medium-to full-bodied and creamy with a flavorful finish. Mineral and flinty. From organically grown grapes. Drink now.

Fresh chamomile leaves and a notion of crushed yarrow give freshness to the nose of this wine that is intense but nuanced. On the palate, freshness frames and shapes everything, despite the rounded, almost gilded peach fruit of 2018. Ripe lemon brightness gives concentration, structure and drive to this gorgeous dry Riesling. Drink now–2040.

2018 Julien Schaal Altenberg de Bergheim Grand Cru Gewurztraminer....$34.99
Peach and honeysuckle are subtle on the nose of this wine, harmonizing with Valencia orange notes. The palate is bright and fresh, boosted by gentle sweetness that counters the richness, concentration and inherent warmth alongside a pleasantly bitter phenolic edge. Full of flavor, this is a masterful display of harmony. Drink 2023–2035.
