All Cabernet Sauvignon from specific hillside blocks on the estate, Shafer's 2021 Cabernet Sauvignon Hillside Select spent 28 months in 100% new French oak. It's a big, ripe wine, weighing in at 15.5% alcohol, but it remains harmonious from front to back. Deep, intense aromas of black cherries and cassis are accented by dried spices on the nose, while the full-bodied palate is rich and textural, showing tremendous intensity and length on the finish. Based on how previous examples have aged, this vintage should drink well through 2050.

Aged 32 months in 100% new French oak. It is quintessentially Stags Leap, with grapes grown on Shafer's famous Hillside estate vineyard, roughly 25ha, with very shallow volcanic tufa soils. It's a barrel selection of the very best blocks. A total of 2,900 cases were produced. Such a beautifully balanced wine with tremendous staying power and expressive Stags Leap ironstone minerality with heady sagebrush and conifer notes with white pepper and walnut husk. The wine has an impressive depth of red-toned fruit on the mid-palate framed by tannins that practically dance across the palate, exuding length, tension, and power. Huckleberry and black cherry fruits, black truffle, dried violets, graphite, and salted dark chocolate are all framed by racy acidity, which keeps everything fresh and lifted. The 2021 releases mark Elias Fernandez's 38th vintage as Shafer's winemaker. He was hired by John Shafer in 1984, two weeks out of UC Davis.

Breathtaking. Exceptional integration of super ripe blackberries and the very finest oak. The tannins build up beautifully, forming wave upon wave as the wine flows across the palate. Then the wave breaks on your palate and shoots way out at the finish, so that you wonder where it will end and normal life begin again. Needs time to soften, but this is so, so good. Give it two or three years.

As with the 2015, the 2016 Cabernet Sauvignon Private Reserve shows the vintage beautifully and is more pure, classic, and elegant. Notes of crème de cassis, graphite, lead pencil shavings, and freshly crushed rocks give way to a medium to full-bodied, seamless Cabernet that has remarkable purity of fruit and impeccable balance. Made from 97% Cabernet Sauvignon, 2% Cabernet Franc, and 1% Petit Verdot aged in 83% new French oak, it’s more reserved and backward than the 2015 and will benefit from 2-4 years of bottle age and keep for two decades.

The liquid is brewed with American Centennial and Chinook hops, fermented using the Lagunitas’ English house ale yeast. The medium-colored brown ale is slightly roasty with a hoppy note, the company says. We are not known for malty beers,” says Jeremy Marshall, Lagunitas brew master. “We are really honored and excited to re-imagine the new Newcastle Brown Ale using our malts, hops, and yeast for a silky smooth flavorful experience.”

Newcastle Brown Ale definitely tastes different. For starters, it’s less sweet.Drinkers familiar with Lagunitas will likely think one word for this brewery: hoppy. It’s well known for bitter beers. So we wondered whether Newcastle Brown Ale might become much more bitter. After all, the new recipe includes classic Lagunitas hops: Centennial and Chinook. But the end result is not extremely bitter. It’s perfectly balanced: roasted-malt caramel flavor with a subtle bitter backbone, more so than the old recipe. Lagunitas did add 8-10 more IBUs, but they blend in rather than stick out.
Newcastle Brown Ale is also now an all-malt beer, made with Lagunitas house malt. Some fans may decry that this U.K. classic has become completely Americanized. To the contrary, Lagunitas Master Brewer Jeremy Marshal pointed out that the Chicago brewery uses a British-style house yeast.
He did not want to deviate far from what has worked for Newcastle Brown Ale. “We’re known for our super-hoppy beers, our barrel-aged specialties and other crazy brews, so the temptation was there,” Marshal said. “But this is not a beer you want to get that cute with. We said, ‘Let’s keep the soul intact’.” The ABV remains the same (4.7%), as does the color.
