The 100% Islay Sherry Cask Matured 11 Years Old, was distilled from our 2011, 2012 and 2013 barley harvests, and matured for a minimum of 11 years in ex-oloroso sherry butts. Bottled at 50% abv. with no added colour or chill-filtration, this release combines 16 individually selected first-fill oloroso sherry butts originally used by José y Miguel Martin, Jerez, Spain.

This release differs significantly from the recent 100% Islay 15th Edition, which was matured exclusively in ex-bourbon barrels for nine years. Ex-sherry casks impart remarkable depth, with pronounced notes of dark fruits, spice, and smoked meat, in contrast to the lighter citrus-driven profile more typical of our previous 100% Islay expressions.

The new vintage is 60% Syrah and 40% Grenache
The grapes for this wine are organically grown in sandy clay soil in two different parcels: 4 hectares surrounding the domaine; and 4.5 hectares in the quarter called le Moulinas. The yields are 45 to 50 hl/ha and the vines average 40 years in age. The grapes are harvested by hand with a hand triage to select only the best quality grapes. They are de-stemmed and crushed, followed by maceration in temperature controlled tanks. The two grape varietals are vinified separately based on the time at which they are harvested. This ensures that each grape variety is brought in and vinified at optimal maturity. The wine rests in tank and is racked 2 to 3 times over the winter.
The wine is certified organic by Ecocert

Eclipsed by its Bordeaux varietal siblings perhaps, but as far as warm-climate shiraz goes, this is at the apex of the qualitative totem pole. Blue fruits, violet, anise, clove and pepper grind. Some salumi, too. But the tannins are this gorgeous wine's opus. *Gold*

The 2021 Silver Oak Cabernet Sauvignon from Alexander Valley was harvested between 4 September and 8 October. The blend comprises 96% Cabernet Sauvignon, 2% Merlot and 1% each of Cabernet Franc and Petit Verdot. After blending, it was barrel-aged for 24 months in American oak, 50% of which was new, followed by 14 months of bottle ageing prior to release. The wine is beautifully layered and highly fragrant, with remarkable precision and focus in this vintage. Medium- to full-bodied, it integrates the hallmark Silver Oak American spice character through cedarwood aromatics, elegant whispers of vanilla bean, and nuances of fresh fennel (from more refined American oak barrels crafted after precision trials of both seasoning and toasting from the American oak cooperage they own in Higbee, Missouri). Supple dark-cherry and blackberry fruit are framed by graphite minerality, violets and clove, building in richness and complexity across the palate. Suave and silken, the dark-berry fruit is wrapped in a tapestry of velvety tannins, gliding to a focused finish of brown baking spices and crisp, clean acidity.

Blend of Barrel Aged Imperial Stout and Barrel Aged English Barleywine with Vanilla Beans With Tarpey is a special collaboration blend created with our longtime friend Matt Tarpey of The Veil Brewing Co. This beer is a blend of 57.1% Barrel Aged Imperial Stout and 42.9% Barrel Aged Barleywine, featuring threads from barrels of MJK, OWK, Vibes, and Horchata that rested in oak for 15 to 26 months. After blending, the beer was conditioned on 20lbs of Uganda, Comoros, and Madagascar vanilla beans, highlighting our shared love for rich, complex vanilla character. ABV: 15%

This Amber Missouri Saison was brewed in December of 2023 and aged until September of 2024. Bottled in October after a final blend of this Puncheon Fermented Saison was reached, we allowed it to condition in the bottle until it was ready to share with you!

Oak Aged Missouri Saison with Cara Cara Oranges. Bretta Sang was brewed in collaboration with our friend and brewer Troy Meier. This tart Missouri Saison is an exploration into pairing the bold flavors of Cara Cara Oranges with the fermentation characteristics of select Brettanomyces and Lactobacillus strains. This Saison was fermented in and aged in French Oak Puncheons for 15 months before being naturally conditioned in this bottle. ABV: 7%

This is a rich Missouri wheated bourbon that showcases the bold character of upper-floor -- 6th floor!! We seems to always pick high floor bourbons. It has aroma of caramel, toasted oak, some baking spice, and dark cherry and finishes with lingering vanilla, cinnamon, and long, warm finish. This is a full bodied whiskey - do not miss it!
