Estate fruit yielded a unique style of Sauv Blanc: glossy rather than grassy or herbal, not tropical and certainly not tropical, and certainly not overwhelmed by harsh citrus. A low and slow fermentation along with the use of one-third barrel, one third stainless steel, and one third concrete egg showcases - and preserves -- the best nuances of the flavors and aromatics, including honeyed golden apple and lime chiffon.
