Like all of our Brewery Collaboration Series whiskies, this spirit started off as a great batch of actual beer at the brewery. Which we then took, distilled, and aged into an actual whiskey.
This particular whiskey was born as a delicious imperial stout brewed by our friends at Side Project Brewery. We took that actual beer double-distilled it and aged it in new oak barrels for over 2 years to create a single malt whiskey showcasing decadent notes of caramel and roasted cacao. You’re welcome.
Tasting Notes:
Nose: Warm cereal grain with undertones of cooler beer yeast.
Palate: Rich and creamy barley, caramelized cereal, and hints of spice berries on the finish.

2020 Atalaya Laya Red Blend...$9.49
The 2020 Laya is balanced, harmonious and serious, and the vintage seems to have absorbed the oak quite nicely. This is always produced with 70% Garnacha Tintorera and 30% Monastrell. It fermented in stainless steel vats with neutral yeasts, with malolactic in barrel, where the wine matured for four months. 360,000 bottles produced. It was bottled in March 2021.

The combination of a very successful vintage, the deep fractured soils of the Truchard vineyard, a short barrel fermentation followed by extended sur lie aging has once again produced a remarkable Chardonnay in the unique Frog’s Leap style. Subtle but distinct white peach combined with lightly toasted hazelnuts define the aromas. But it really is the crisp, perfectly balanced, and bone-dry flavors that make the wine. The only problem with serving it with a perfectly baked quiche Lorraine is that too much of the bottle is empty by the time the quiche comes out of the oven!

This is a really solid white with so much structure and depth, as well as a border-less, encompassing palate. Full-bodied and polished with lots of length. The malt is what defines its distinctive profile. Described as tasting like ‘biting on a spiky ball’, Ardcore is a dram that wears its heart on its sleeve… its black heart!

Notes of charcoal and sweet smoke make for an in-your-face nose, while potent notes of aniseed and dark chocolate stamp this bottle out as one fit only for the most Ardcore of fans.
