Many coffee beers are made using beans on the hot side- but not ours. A cold brew leaves behind the bitter acids and some fatty oils that can lead to a harsher, more vegetal taste transfer, and instead, highlights the roasted, comfortable coffee taste we all love. This, paired with the perfect pumpkin pie spice in our imperial Pumking ale creates the entire picture in just one sniff and sip.
Cold Press Coffee Process:
A roasted coffee bean contains many compounds that are extracted when it comes in contact with heated water (or wort in this case). Some of those compounds, including certain oils & fatty acids, are soluble only at a high temperature. During the cold brew process, coffee beans are never exposed to high temperature. At only 30 IBU, cold press brewing extracts the delicious flavor compounds (& some of the caffeine) from coffee beans, but leaves behind myriad bitter oils and biting fatty acids. These are the same bitter acids & fatty oils that surface to the top of a hot cup of coffee, and give hot-brewed coffee that familiar ‘bite’, thus the reason people attempt to soften the acidic taste with cream in their coffee.
