Taleggio Italy
Taleggio is made with Stracchino curd, pasteurized cow milk and is cave-ripened in northern Italy. The washed rind is thick, and soft- ripens the interior paste.   The current batch is at a perefect ripeness right now   It is earthy, yeasty and robust.
