7000' is the exact elevation of High West Distillery's bar. High West 7000' pays tribute to our high-altitude locale and its unique attributes, which lead to a great tasting vodka. Here in our mountains, pure snowmelt is naturally filtered in deep rock aquifers to produce great-tasting water with a well-balanced mineral content. We combine this superb water with carefully distilled oats to give High West 7000' its silky-smooth taste and rich mouthfeel.

The heart of High West 7000’ comes from our favorite grain, oats. According to old manuals, distillers from the 1800’s considered oats to make a superior tasting libation. Oats aren’t used today because of their high cost and difficulty to distill – we think their subtle nutty and vanilla flavor is worth the extra effort. Our manually operated Copper Post Still gives us more deliberate control in selecting the most flavorful “heart” of the delicate oaten flavor. The combination of our carefully distilled oat spirit and special water creates a silky smooth tasting vodka with a rich mouth feel. High West Distillery & Saloon is Utah’s first legal distillery since 1870 and the World’s only Ski-in Gastro-Distillery located at exactly 7000’ at the base of the Town Lift in the heart of Old Town Park City, Utah. High West makes spirits for people who want great taste and appreciate quality ingredients, small batches and the owner’s personal touch. Our saloon is a quaint, family friendly, full-service restaurant and bar where visitors can refuel and refresh in our renovated 100-year-old livery stable and Victorian mining era home, both listed on the National Register of Historic Places. Nose: Soft with subtle vanilla, sweet grain and faint lemon rind
