Our Doublewood Rum is like no other rum out there. As a robust, rich rum – tropical fruit notes from our Bourbon Cask Rum are are further complemented by bold spice, delicate fruit and creamy vanilla flavors from its unique aging process. Extremely sippable by itself or over ice, it also adds great dimension to a wide range of cocktails.
Tasting Notes:
Bold aromas with fruit, spice and vanilla notes
Layered, integrated flavors, with rich vanilla and cherrywood accents
Round, smooth texture with a lingering finish – perfect for sipping and also mixing
Production Notes:
Begins as our Bourbon Cask Rum, which we make from the highest grade of molasses, with a custom long fermentation process and pot distillation by the amazing Still Ethel
Aged in full-size used bourbon casks for 4 to 6 years, then further aged with Cherrywood and Mexican Vanilla Beans
Then we blend select casks together to ensure the best tasting rum for bottling

Production Notes:
We use a base spirit made from Midwestern grain.
We hand prepare a range of organic and wild-harvested botanicals for this gin, including juniper berries, cardamom, coriander, cinnamon, anise seed, fresh orange and lemon peels, and osmanthus blossoms, which impart an intriguing, delicate floral and fruit note to the spirit.
We infuse the botanicals into our base spirit for varying lengths of time depending on their particular characteristics, and then distill them through Ethel the Still using a slow, meticulous process that enables us to create fresh, bright flavors.
After distillation, we add water and a touch of sugar to achieve 90 proof (45% abv), an ideal proof for cocktails.

Our Bourbon Cask Rum has a smooth, fruity and dry flavor profile, with tropical fruit and spice notes. Because we’ve added no sugar, it sips a bit like a whiskey, and is great on its own or over ice. It also makes amazing cocktails, and unlike many aged rums, it does not make the cocktail overly sweet.
