"The vibrant aromatics and flavors that are derived from the use of exuberant amounts of fresh flower hops are what helps create and set apart this most unique beer. New this year (besides the kick-ass new logo) is the fact that 100% of the Fresh Hops are grown right here in Colorado – from Rising Sun Farms in Paonia, CO (there are a few other varieties from our hop farm here @ the brewery, as well as from local growers right here in our area, but the majority are Cascades). We use Warrior hops for bittering, and Goldings for dry hopping. True to our fundamental belief system, the strong hop character is balanced by a strong malt foundation, allowing for an approachable, drinkable IPA that finishes amazingly clean. The beer is full-bodied, bronze in color, and tips the scales at 6.6% alcohol by volume and 60 IBU’s. Available in 22 oz. bombers and kegs. "Ingredients and techniques from two different areas come together to produce the beer in this bottle. Van Twee (From Two) is the remarkable result of a collaboration between two breweries known for extreme innovation: Bell's Brewery of Kalamazoo, MI and De Proef Brouwerij of Lochristi, Belgium.
Special emphasis was placed on using ingredients from both Belgium and Michigan in designing this beer. Michigan is renowned for producing sour, dark cherries of superior quality, and a significant quantity of cherry juice was added to the brew. Deep hued Belgian candi sugar adds to the complex flavor of the beer. The sugar used for bottle conditioning came from native Michigan sugar beets. A finishing fermentation with the vinous Brettanomyces strain of yeast complements the unique New Zealand hop variety Nelson Sauvin.
The result is broadly a cherry infused 'mash-up' of the Porter and Dubbel styles, brewed to an original gravity of 1.072 and fermented with multiple strains of yeast. Each ingredient used brings a subtle hint of varied fruit such as plum/prune from the roasted malts; gooseberry/grape from the hops' pear/banana from the yeast and specialty sugar; and of course cherry. These flavors are wrapped in a rich and complex roasted malt base that imparts flavors reminiscent of chocolate and coffee-much like the famous filled chocolates of Belgium.

History of Fraoch "A long time ago, in a home brew shop not too far away……..
A lady of Gaelic decent came into the Williams owned homebrew shop in Partick, baring a translation of a 17th century recipe for “Leanne Fraoch” (Heather Ale), Inherited from her Gaelic family. It was her goal to try to recreate recipe made famous by the old legend of
the Pictish king who supposedly through himself off a cliff after the English king captured and tortured his son in an attempt to coax the recipe from the Pict King. This translated recipe was developed in homebrew size quantities by shop owner Bruce Williams to the recipe that is used today.
The company started life in 1988 with Bruce brewing our flagship beer Heather Ale, in a tiny brewery in Taynult, where we could producing no more 5 barrels per batch, just
enough to supply 5 pubs across Scotland; 2 in Edinburgh, 2 in Glasgow andThe Clachaig Inn in Glencoe. As demand grew the project expanded and a bigger brewery was needed to brew the larger quantities required. So the recipe was taken to the old Maclay’s brewery in the traditional Scottish brew town of Alloa. Along with Heather Ale, 4 other historic Scottish ales were developed using natural Scottish produce such as elderberries, the shoots of Scots pine, seaweed and gooseberries. In 1998 the Heather Ale brewery moved its production of cask ales and office to Craigmill outside Strathaven where we remained for 6 years before taking over the New Alloa Brewery at Kelliebank, Alloa, where we are the last remaining brewery in the old Scottish brew capital.

Macallan Distillery
The Highlands have a few different sub regions and styles- this one is considered a Speyside by location and style/profile. Macallan uses smaller pot stills that are directly fired (read fire under the still- not steam coils or jackets) and slow distillation to make it's whisky. This is also probably one of the few whiskies left that used 100% Golden Promise barley (a more expensive, lower yield, barley but resulting greater weight and taste to the malt) and five different yeast strains - a practice that stopped in the mid 1990's, making such Macallan Whiskies an endangered species that should be hunted to extinction by those who care about such things." -- spiritsreview.comOct 22, 2009

To recall, the Bush de Nuits beer is quite amazing and absolutely unique. Given its long maturation in barrels that have contained wine from Nuits St Georges, it has no resemblance with other beers. This is a true character of beer, the amber-red dress, but slightly thinning that special aroma and complex beer with winy overtones.
"When he got back from Burgundy in France, where he had been buying wine in the Nuits-St.-Georges region, Hughes Dubuisson came up with the idea of matruring Bush/Scaldis de Noel in oak casks which had previously contained the famous Cotes du Nuits. After 6 months of maturing, 210 prottype bottles were draw for presentation to the specialist press. The test was conclusive and Bush/Scaldis Prestige de Nuits was born!!
The old style maturing, in oak barrels previously used to hold Nuits St. Georges wine, allows the taster to enjoy a highly flavoursome some with wine-like aromas of red fruits giving it an amazing harmonious balance in the mouth with sweetness, a hint of acidity and a relatively dry aftertaste in spite of the high density of the beer. Boulevard To Collaborate With International Brewer
Brewmasters will partner on new Smokestack Series offering
KANSAS CITY, Mo., October 9, 2009 – Boulevard Brewing Company today announced that Jean-Marie Rock, brewmaster at Orval, the renowned Trappist brewery located in southern Belgium, will team up with Boulevard brewmaster Steven Pauwels to create a small production, limited release beer. The joint effort, a first for the Midwestern craft brewery, will take place during Rock’s late October visit to Boulevard’s Kansas City facility.
The brewers, both native Belgians, will produce an Imperial Pilsner similar to a lager brewed by Rock at the start of his career. It will, according to Pauwels, be a tribute to Pilsner beers; full flavored and refreshing, brewed with 100% Pilsner malt and 100% Saaz hops, using time-honored techniques. “The beer will be made in a very traditional way,” said Rock. “The methods by which it will be brewed, fermented, and lagered are no longer employed, though they made this beer fantastic. It is time to get a beer like this back in a glass.”
For his part, Pauwels is thrilled by the chance to work with his notable colleague. “In this, Boulevard’s first collaborative effort, we are pleased to honor a brewer who has had such an enormous influence on me and on so many other craft brewers. Jean-Marie mastered dry hopping and brewing with wild yeast long before craft brewers began experimenting with the techniques here in the U.S.”
The beer, to be packaged in 750ml bottles as part of Boulevard’s Smokestack Series, is expected to be available in January, and will be distributed through Boulevard’s wholesaler network.

Jean-Marie Rock, Brewmaster, Orval

As brewmaster for one of the world’s most revered and recognizable beers, Jean-Marie Rock is responsible for maintaining a centuries-old brewing tradition in an era of constant global change. The Trappist beers of Orval have retained a unique position of honor for many years, as trends in brewing and – and in beer drinking – have come and gone. Since joining the brewery in 1985, Rock has remained committed to investing in technology to improve the beer’s quality, without compromising its remarkable character.
A 1972 graduate of Vrije Universiteit in Brussels, Rock holds a degree in Brewing Engineering. He later earned an MBA from Université Catholique de Louvain in Louvain-la-Neuve, Belgium. Rock’s career began at Palm Breweries in Steenhuffel, Belgium where he worked from 1972 to 1980. He then spent five years with Lamot Brewery in Mechelen before joining Orval in 1985.
During his decade at Boulevard Brewing Company, Steven Pauwels has overseen all aspects of brewing and quality control as the regional craft brewer’s sales have more than tripled, to over 143,000 barrels in 2009. Pauwels is also responsible for 13 additions to Boulevard’s brand lineup, including the critically acclaimed Smokestack Series line of artisanal beers. Pauwels grew up steeped in the brewing industry. His first stint in the business came with summer work at his hometown brewery, Eeklo’s Brouwerij Krüger, where his father held a job. After receiving degrees in Biochemical Engineering from KaHo Sint-Lieven and in Business Administration from Mercator, both in Ghent, Belgium, he held positions at the Domus brewpub in Louvain and at RIVA brewery in Dentergem. The transplanted brewmaster has received international recognition for his beers, most recently in the form of a gold medal at the 2009 Great American Beer Festival for Boulevard’s summer seasonal, ZŌN Belgian-style Witbier.
