Fresh batch just arrived at Forsyth!!
Tulip Tree Foxglove
This double cream, washed rind cheese has a soft consistency and earthy, more pungent flavors created by a mixture of cultures (yeast, salt, & Hubbard and Cravens Porter Beer made by Thr3ee Wise Men Brewery) applied on the distinctive reddish-colored rind. If you have trouble choosing between a Taleggio and Epoisses, this cheese may hit the spot. The Foxglove ages from four to eight weeks.
Tulip Tree Trillium
Tulip Tree Trilium is a fresh, bloomy-rind cheese inspired by classic French styles but made with a distinctly American touch. Soft and creamy at the core with a delicate white rind, it offers clean dairy flavors, subtle mushroom notes, and a gentle tang that builds as it ripens. Balanced and approachable rather than overly rich, Trilium is an elegant, versatile cheese that shines on a cheese board or alongside crisp whites and light reds.
Cowgirl Creamery Mt. Tam
Cowgirl Creamery Mt. Tam is a triple-cream, bloomy-rind cheese that balances richness with structure. Lush and buttery at the center with a smooth, spoonable texture, it develops subtle mushroom, cultured cream, and toasted milk notes as it ripens. Despite its decadence, Mt. Tam remains composed and savory, making it a benchmark American soft-ripened cheese and a standout on any cheese board.
