What is the difference between Cognac and Brandy?
French Brandy is a broad category that refers to grape-based spirits made anywhere in France, with no strict geographic or production requirements beyond being distilled from wine. Cognac, however, is a specific type of French Brandy that must be produced in the Cognac region, distilled twice in copper pot stills, and aged in French oak for at least two years. While French Brandy offers wide diversity in style, flavor, and price, Cognac is more tightly regulated, carrying legally protected designations like VS, VSOP, and XO that indicate minimum aging requirements. 
In short: all Cognac is French Brandy, but not all French Brandy is Cognac.
