Flory's Truckle Clothbound Cheddar
Flory's Truckle, the beloved raw milk clothbound Cheddar from Jamesport Missouri is aged about 60 days, bandaged in cloth, and rubbed with lard (just like traditional English farmhouse cheddars). The result is a firm, creamy-textured cheese with a nutty, grassy, slightly tangy flavor.
