The foundation of Barrell Craft Spirits Gray Label Seagrass began with two groups of 16-year-old 100% Canadian Rye barrels - one with bright citrus and crisp green apple notes and the other with earthy spearmint notes. A portion of the first group was finished in Apricot Brandy casks, a portion of the second group was finished in Martinique rhum barrels, and a blend of the first and second groups was finished in Malmsey Madeira barrels. When each set of secondary maturation flavors peaked, those casks were pulled and slowly married into the final blend.

Matured for 24 years

Distilled in Canada
Aged in the US and Canada
Crafted and bottled in Kentucky
Finished in Oloroso Sherry and XO Armagnac
121.64 proof cask strength bottlingBCS Gray Label Whiskey began with two selections of 24-year Canadian whiskey barrels: one set was fruit-forward and tropical, and one was woody, with a light floral aroma. A portion of the fruit-forward blend was transferred into Oloroso Sherry barrels and a portion of the floral and earthy blend was transferred into Armagnac casks. The remaining whiskey from the two groups was then combined to mingle. When the timing and flavor from the finishing casks peaked, the three components were carefully blended together.
The mature, spicy whiskey is front and center, reminiscent of wheat fields edged with wildflowers. There is a rare and noteworthy concentration of aroma, enriched with a candy sweetness and leafy earthiness from the finishing casks, that calls to mind a toasty Belgian waffle.

A blend of straight bourbon whiskeys matured in select cooperage
Distilled and aged in TN, KY and IN
Crafted and bottled in Kentucky
This release of Gray Label Bourbon is constructed from bourbons of varying ages made from five different mash bills. After marrying, the blend goes into casks made using 36-month air-dried staves that previously held Gray Label Bourbon, to rest and further mature.
Barrels made from 36-month air-dried staves are not often used in bourbon production, in part because they are much more expensive than casks made with kiln-dried staves. We view them, however, as a key component for achieving long, complex flavors and a rich mouth feel. The result of mingling in these unique casks is a mellow, sophisticated spirit that concentrates the flavor of a higher-proof bourbon into a lower-proof blend, with a gentle oxidative character and deep dried fruit notes. This is a bourbon with the complexity and density of age, without over-oaked chalkiness.

Over the past several years, Barrell Dovetail has become a highly regarded expression within our portfolio of products and the American Whiskey world. Following the success of BCS Gray Label Dovetail, we decided to apply the concept of “Dovetail” to our oldest, rarest stocks. BCS Gold Label Dovetail is created with the same finishing and blending method as our award-winning Dovetail, and incorporates whiskeys aged up to 25 years, resulting in a more powerful and robust blend. We left these component whiskeys in their finishing casks for longer and included some very high proof barrels to create a blend that's intensity is only matched by its nuance and layering.
