Cheeze & Thank You does a wide range of cheezes— from sauces to dips, spreads to blocks, wheels, and everything in between. I focus on providing an array of options for allergy restrictions as well; soy-based, nut-based, and seed-based options are all available. Some of the cheezes done in the past include: Dill Havarti, Queso, Mozzarella, Fresh Mozzarella, Everything Bagel Mozzarella, Gournay, Pepper Jack, Colby Jack, Cheddar, Smokehouse Cheddar, American, Fontina, Truffle Fontina, Black Garlic Fontina, Smoked Gouda, Pesto Gouda, Swiss, Cream Cheese, Brie, Gorgonzola, Feta.. Cheeze & Thank You is a one-woman run vegan cheeze company based out of Chicago, IL. I started making vegan cheezes when transitioning from vegetarian to vegan. I loved cheese and immediately noticed that much of the vegan cheeze available was missing the mark on flavor or texture. There was almost nothing available to meet my want for artisanal, funky, and interesting cheezes. It was either stop eating cheeze all together or learn to make my own vegan version… I went with the latter:)
