Thankfully Champagne has been exempted from the tariffs on French Wine so our shipment from Billecart Salmon has come in at the wonderfully low prices* we expected. Billecart Salmon has long been a store favorite and we are very excited to present this amazing offering of Billecart's latest releases.

NV Billecart Brut Reserve...$49.99*
A fine straw-gold colour with great finesse of bubble flow and mousse. Joyful aromas of apple blossom and ripe pear. A full, defined palate demonstrates richness that will help to give this a long life in the cellar.

NV Billecart Brut Rose...$77.99*
Pale yet intense pink in color, the Billecart-Salmon NV Brut Rosé is pure, fresh and intense on the nose, with lovely raspberry aromas, refreshing citrus zest flavors and great definition. On the palate this is a pure, light and vinous rosé with great finesse and a long, well-structured and even juicy finish. This iconic rosé blends 40% Chardonnay with 30% Pinot Meunier from the Vallée de la Marne and the southern slopes of Epernay and 30% Pinot Noir (with a small part added as red wine) from the Montagne de Reims and the Grande Vallée de la Marne. 2008 Billecart Extra Brut Champagne...$89.99*
A blend of 65% Pinot Noir consisting of Premier and Grand Crus from the Montagne de Reims and the Vallee de la Marne and 35% Chardonnay from the Cote des Blancs. Significantly, this has nine years ageing on its lees (longer than some Prestige Cuvees), the 2008 was first released onto the global market back in March 2019. With an Extra Brut dosage of 4g/l, this is a highly expressive, confident and convincing interpretation of the vintage. Right now, it is youthfully sharp and focused with fine salinity, depth, acidity and balance, and as such is already extremely approachable. The flavour spectrum encompasses toast, oyster shell, citrus, cream and a flinty, mineral depth. 2007 Billecart Salmon Rose Cuvee Elisabeth...$219.99*
Aromas of red berries, orange rind, dried flowers, warm brioche and spices introduce the 2007 Brut Rosé Cuvée Elisabeth, one of the highlights of this tasting chez Billecart. It's full-bodied, broad and vinous, with an enveloping attack and a bright underlying spice of acidity, revealing plenty of chalky dry extract and concentration, concluding with a long and precise finish. Despite the style of the vintage and the fact that malolactic fermentation was largely blocked, this is quite a textural, powerful wine.

2006 Billecart Salmon Cuvee Nicolas Francois....$169.99*
Created in 1964 as a tribute to the house’s founder, the youngest release is the 2006 Millésime Brut Cuvée Nicolas François, a blend of 60% Pinot Noir from premier and grand crus from the Montagne de Reims and the Grande Vallée de la Marne and 40% Chardonnay from the Côte des Blancs. Almost entirely fermented in stainless steel (only 5% was vinified in oak barrels) and aged for 11 years on the lees, this is a beautifully ripe and rich yet pure champagne with ripe fruit flavors intermixed with chalky notes and brioche/nougat flavors. The palate is intense and concentrated in its rich fruit and substantial depth but also tight, highly elegant and perfectly balanced. The typical finesse of Billecart-Salmon is palatable as well as amazingly pure, with the persistent structure of a great Champagne. The 2006 already drinks dangerously well, but there is no need to hurry, this will go a long way.
