In Santiago Matatlan, Oaxaca, the Espadin are roasted in a stone pit fire for a week and crushed by horse on a tohona stone mill. Double distilled in a 5th generation copper still, drip by drip. Bottle by hand in rustic glass.
What is the difference between Mexcal and Tequila?
- Agave Varietal: All mexcals must be 100% Agave Juice. Tequilas must be 51% Blue Agave Juce
- Location: Mexican laws state that tequila can be produced only in the state of Jalisco and limited regions in the states of Guanajuato, Michoacan, Nayarit, and Tamaulipas.
- Production process: Mezcal uses an open pit fire to cook Agaves and Tequila production uses a steam oven.
