Sullivans Cove whisky was established in 1994 at Sullivans Cove in Hobart, the birthplace of Tasmanian whisky. Sullivans Cove is the spot where the British first established the settlement that would grow into the City of Hobart. Being a penal colony, the locals were quite fond of a drink with 16 legal distilleries and countless illegal stills operating by 1824. However, in 1838 Governor John Franklin imposed a total prohibition on distilling that lasted 150 years and was only overturned in the early 1990s! Since then the Tasmanian whisky industry has developed into a small but significant force on the global scene.
Sullivans Cove is one of Tasmania’s most successful and widely distributed whiskies, available in 11 countries and the winner of some of the most prestigious international whisky awards.

This is the one that first grabbed the world’s attention and gave them cause to take us seriously!
It was the American Oak expression that was awarded a coveted 95/100 by whisky guru and trendsetter Jim Murray in his 2007 Whisky Bible. With it being a single cask bottling, stock was very limited from the outset and once word got out the race was on, with the last bottle of that cask selling for a whopping $1125! The American Oak Cask continues to impress judges the world over and is probably Tasmania’s most highly awarded whisky.

TASTING NOTES:
NOSE: Malt, spice, subtle nutty characters and light cream.
PALATE: Rounded, full, creamy. Initially lots of sweet barley and fruit at front of palate, vanilla comes through and citrus notes in the middle palate.
FINISH: Honey. Long, even finish with great balance.

Sullivans Cove's French Oak cask was voted the World's Best Single Malt Whisky at the 2014 World Whisky Awards, beating off stiff competition from Scotland and Japan. This is the first time that a whisky from somewhere other than Scotland or Japan has won this honour and this goes to show what we have always known!
Our French Oak is one of the highest awarded whiskies in the world and accolades include Spirits Business magazine’s World Whisky Grand Master 2012, Wizards of Whisky Australasian Distiller of the Year 2012, Southern Hemisphere Whisky of the Year in Jim Murray’s 2013 Whisky Bible, Best Austrlian Single Malt 2013 World Whisky Masters, Australian Single Malt Whisky of the Year at the 2014 Wizards of Whisky and now, the big one, Best Single Malt Whisky in the World.
Demand for the Port Cask has become so intense lately that we have a 2-month waiting period for larger orders, probably in no small part due to us drinking most of the stock ourselves! This single cask expression currently varies from 11 to 12 years in age and is a big, fat, chewy whisky full of rich toffee and molasses notes. You could almost be forgiven mistaking it for Demerara rum at first impression!

The Double Cask is our flagship product and is a truly delightful introduction to our range and to Tasmanian single malt in general. It has a gentle creamy palate with really subtle flavours that make it perfect for everyday drinking. After a great meal, at a picnic or around the BBQ with a few mates, the Double Cask won’t let you down. Each unique batch is a superb combination of one French Oak Port barrel and two American Oak Bourbon barrels, gently brought down to 40% ABV with pure Tasmanian water and allowed to settled and clear naturally for 4 months before bottling. To ensure that we use the best whisky, we only use barrels 10yrs or older for our signature double cask.

TASTING NOTES:
NOSE: Vanilla driven perfume, floral fruit, soft spice and cloves.
PALATE: Soft, creamy, well structured and balanced. Herbal, then some spices and honey. English candy notes and a hint of pear.
FINISH: Well-rounded fruity finish of a medium length with hints of honey and milk chocolate.
