This one is not a single barrel, or is it?.  It is a blend of our 4 previous barrels blended into one barrel and then bottled.   Demetrius saved 25% of each of the previous and blended them together for one amazing Celebration Whiskey.  

If my math is right, this should be the rough mashbill.  Took the 4 Mashbills of the previous barrels and added them up and divided by 4.

We picked a few barrels at Side Project.  The first release is scheduled for January.  Barrel Aged Imperial Stout  in a Willett 5yr Bourbon Barrel collab with Toppling Goliath.  We will announce release details in January

Merci was blended for our friend Paul Hayden at The Wine and Cheese Place in St. Louis. We would like to say “Merci” for all his support of Side Project Brewing by releasing Merci Vintage 2024, a blended Missouri Wild Ale.
For this latest Vintage, we focused on one of our favorite iterations of this beer, Blend #2, by incorporating a rich, funky Lambic-like palate, with our classical Side Project depth, and softness. As we do not blend to volume, only to taste, this batch is much smaller than previous releases and is packaged in 375 mL bottles to make sure we have enough to share. We also bottled this release of Merci in early January and have conditioned it exclusively with Brettanomyces Brux., a process we do not often use, for years of purposeful maturation and development in the bottle. We want this beer to express Side Project and our blending characteristics for years to come as you enjoy it now or later while saying “Merci” to those you are thankful for.

Grapes are harvested when it’s cooler, in fully ripe. Wine making : After destemming, berries are macerated during a few hours, and then are slowly pressed. Then, the derived pressed must is put into thermoregulated stainless steel vats, and fermentation will go on for 10 days or so. Once fermentation is over, wine is matured on lees before bottling.
This rosé wine shows a redcurrant colored robe with light reflections. It has very deep fruit aromas including cherry, raspberry and black berry. Now this is a treat. The cool 2021 season has really gifted the 2021 The Quickening Shiraz with detail, openness and poise, and the tannins emerge as being one of the true highlights. They are ultra fine and grippy, a little bit chewy, and serve to frame the fruit in such a way that they extend the line and length of the experience. I'm smiling as I type this, and I think that's a great sign that I like the wine very much. Delicious.

The 2022 vintage was a Euro-styled year of poise with plenty of fruit weight and immense freshness, although it has not reached the same lofty heights as the 2021 vintage. Savory. I'll take that over obvious sweetness any day. The first cab from the premier rank. A sub-regional blend limited to old, dry-grown bush vines. Varying degrees of whole bunches. A number of picking windows, too, to embellish freshness and enough weight. Ambient fermentation. One would be hard-pressed to find a better wine than this for the price. Kirsch, ume, cranberry, bergamot and a scape of pixelated tannin, sandy of feel, directing length. Drink or hold. Screw cap.
