Waterford Irish Whiskey Zoom

Waterford Irish Whiskey Zoom
Tasting w/Raj Sabharwal owner of Glass Revolution

Wednesday, January 20th
7-8:30pm (room opens at 6:30)

On Jan 20th, Welcome back our friend, Raj Sabharwal, importer, spirits expert and one of the true gents in the industry. Raj is focusing on the long awaited project from former Bruichladdich distillery co-owner, Mark Reynier. Below is his mission statement for the distillery

“We chose Waterford, for here on the banks of the river Suir, on Ireland’s sunny south-eastern coast, we have an exceptional state-of-the-art facility originally built by Diageo in 2004 and converted to distilling in 2015. And we have the finest quality raw materials: the purest of spring water from renowned ancient wells; a team of passionate distillers that share the vision; and the very best barley in the world.   Using the world's finest barley, our Single Farm Origin series is an uber- provenance range of natural whiskies that explore Irish terroir one place, one farm, at a time.  Barley-forward, terroir-driven, natural whisky. No coloring, chill-filtration or any additives whatsoever.”

Purchase a minimum of one bottle to be included in the zoom tasting. Pick any one of the expressions below and we’ll email you the Zoom invite. If you have already purchased one of the Waterford expressions, email me at dave@winandcheeseplace.com

Stone Sublimely Self Righteous Ale Black IPA

Stone Sublimely Self Righteous Ale Black IPA....$15.99 / 6pk
"Black IPA"
We're brewers whose substantial mettle and idiomatic approach to brewing allows us to consistently create works of art such as this justifiably self-righteous ale. Its bitterness hits our sweet spot. Its blackness lightens our hearts. Its liquid dichotomy pulls it all together in this sublimely sacrosanct ale. Yes, we damn well know our stuff here at Stone, and it would be irresponsible of us not to acknowledge how remarkable this heavenly creation of ours is. Thus the name we are compelled to give it --- Stone Sublimely Self-Righteous Ale --- serves as a reminder of just how good we are, in both liquid and verbal form.

We're certainly not perfect. Too often, we allow our modesty to get the best of us as we're simply not inclined towards senseless braggadocio. When you're good, you're good. And when you do something great, the least you can do is acknowledge it. Others benefit from knowing. In this case, we find that we are compelled to point out how amazing this ale is that we rightly call the Stone Sublimely Self-Righteous Ale.

First brewed in 2007 as the Stone 11th Anniversary Ale, this ale was an instant hit. With us. Other folks with great taste loved it too, but we were focused on how much we liked it, and we felt it was truly sublime. That euphoria didn't last long though, as it was soon replaced with the grim reality that when we sold out of it there wouldn't be any more. For us. And that was simply unacceptable. So, we are now blessing ourselves, and you the enlightened, with this ale. Thusly, you may now revel in your own self-righteousness as you see fit with this glorious example of ours. You are genuinely welcome, as it is our pleasure.

Like a good ice cream sundae, all the flavors are really working together - melting together - into a single delicious sip.
The cherries brighten the beer with a bit of fresh tartness, and the vanilla, cacao nibs swirl with the deep nutty pecan.

2014 Massolino Vigna Rionda Riserva

Shortly on heels of the release of the Massolino Barolo 2016 which was the Wine Spectator #7 Wine of the Year we are very excited to receive the 2014 Massolino Barolo Vigna Rionda Riserva. "Massolino's 2014 is one of the greatest Vigna Riondas I have ever tasted."-Antonio Galloni Vinous

2014 Massolino Barolo Vigna Rionda Riserva $149.98
Only 30 bottles available
The 2014 Barolo Riserva Vigna Rionda is a stunning wine. Sweet, perfumed and deep, the 2014 is off-the-charts great. Dark red and purplish berry fruit, mint, lavender, spice and hard candy infuse the 2014 with striking layers of nuance. But what really impresses about the 2014 is its depth and huge vertical build. All the elements fall into place in a sumptuous, deep Barolo that screams with character. Beams of tannin punctuate the finish. Massolino's 2014 is one of the greatest Vigna Riondas I have ever tasted.
Rated 98+/100 Vinous Media
The Massolino 2014 Barolo Riserva Vigna Rionda is a wine that speaks of vintage as articulately as it speaks of site. The 2014 vintage is one of the most distinctive within these past two decades, with a quality of fruit that is fine, light, ethereal and almost fragile. However, Serralunga d'Alba, where the Vignarionda cru is located, is always characterized by extra power, structure and fruit weight. In a sense, this Riserva represents an intersection between those two opposites, showing both elegance and muscle. The wine opens to a pretty garnet color, and the aromatic intensity is well developed and capped by a mid-weight finish. Wild berry tones are followed by iron ore, blood orange and camphor ash. Massolino farms 2.6 hectares within the cru with calcareous and marlstone soils. Some 8,500 bottles were made, and this wine will be released in September 2020.

Domaine St. Prefert Chateauneuf du Pape Cuvee Auguste Favier

Chateauneuf du Pape Superstars!
“Proprietress Isabel Ferrando has taken her Saint Prefert estate to France’s highest level, and she’s unquestionably making some of the most profound wines on earth today”-Jeb Dunnuck

2016 Domaine St. Prefert Chateauneuf du Pape Cuvee Auguste Favier...$71.99
This is beautifully rendered, with a core of focused red currant, plum and raspberry coulis flavors that stretches out nicely while flecks of tobacco, bergamot, and singed sandalwood weave around. A bolt of iron detail shows through the finish, with a light echo of worn leather. Well-built, showing ample energy in reserve. Best from 2020 through 2040. 1,400 cases made, 100 cases imported. — JM
Rated 97/100 Wine Spectator
Incredibly perfumed and complex, the 2016 Châteauneuf-du-Pape Reserve Auguste Favier has put on weight since I tasted it as a barrel sample and offers full-bodied notes of currants, Asian spices, dried flowers, and lavender. It's powerful, concentrated and layered, yet always light on its feet and beautifully balanced, with a seamless, elegant texture as well as the purity of fruit that's the hallmark of this great vintage. It's a rock star wine from this terrific estate that's going to drink beautifully for two decades.
Rated 97/100 Jeb Dunnuck
A blend of 85% Grenache and 15% Cinsault, the 2016 Chateauneuf du Pape Reserve Auguste Favier boasts enchanting floral aromas, intoxicating raspberry and cherry fruit and enthralling hints of Swiss cocoa. Full-bodied, rich and velvety, it nevertheless comes across as fresh and nearly weightless. The use of stems (the wine is all whole bunches) and an elevated proportion of Cinsault has certainly contributed to this wine's soaring aromas and sense of freshness. It's a fascinating wine.
Rated 97/100 Wine Advocate

2018 Domaine St. Prefert Chateauneuf du Pape Cuvee Auguste Favier...$71.99
This red puts on a gorgeous display of racy cassis, cherry puree and raspberry coulis flavors laced with garrigue and singed sandalwood accents, while a mouthwatering mineral edge drives underneath. The long finish lets the fruit play out, adding flickers of tobacco and shiso leaf. Grenache, Syrah, Cinsault and Mourvèdre. Best from 2022 through 2038. — JM
Rated 96/100 Wine Spectator
Also Grenache dominated yet blend with 15% Cinsault, the 2018 Châteauneuf Du Pape Reserve Auguste Favier gives up a brilliant and complex bouquet of red and blackberries, Provençal garrigue, lavender, peppered meat, and baking spices. Rich, full-bodied, and with another level of concentration over the classic cuvee, this is another incredibly classy, seamless, flawlessly balanced wine that does everything right. It’s certainly great today yet has building tannins and is going to evolve for 15+ years.
Rated 95/100 Jeb Dunnuck
Usually the most ethereal and perfumed of the cuvées at Saint-Préfert, the 2018 Chateauneuf du Pape Reserve Auguste Favier lives up to that billing yet again, with floral notes that suggest rose petals and violets, delicate hints of dried spices and Provençal herbs and plenty of red-berried fruit. It's full-bodied but almost lacy in feel, with a fine, silky texture and a long, elegant finish with a surprisingly tannic edge.
Rated 95/100 Wine Advocate

Domaine St. Prefert Chateauneuf du Pape Collection Charles Giraud

Domaine St. Prefert Chateauneuf du Pape Collection Charles Giraud...$133.99
Intense, with a Turkish coffee note out front before the core of steeped plum, black cherry and fig fruit starts to unfurl, while extra hints of singed alder, garrigue and warm earth develop, adding length and range on the finish. Delivers muscular power and perfumed grace that work together perfectly. Grenache, Mourvèdre and Syrah. Best from 2022 through 2040. — JM
Rated 97/100 Wine Spectator

Boasting the darkest fruit of the three 2018s from Saint-Préfert, the 2018 Chateauneuf du Pape Collection Charles Giraud delivers notes of black cherries and dark chocolate, plus hints of wintergreen, cassia bark and baking spices. It's full-bodied but less expansive on the palate than the others, compact and dense without being heavy or overdone, and it's framed by ripe but supportive tannins. Mexican chocolate and cola notes linger elegantly on the lasting finish.
Rated 96/100 Wine Advocate

Lastly, the 2018 Châteauneuf Du Pape Collection Charles Giraud is a more Mourvèdre driven wine and is 60% Grenache and 40% Mourvèdre, from 80-year-old vines, that was only partially destemmed and brought up all in demi-muids. Ruby/purple-hued with gorgeous crème de cassis and black cherry fruits as well as notes of smoked meats, white chocolate, ground pepper, and candied violets, this beauty hits the palate with full-bodied richness, a seamless, silky texture, ultra-fine tannins, and a great, great finish. As with the other 2018s here, it’s pure class. It can be drunk today or cellared for 15+ years.
Rated 95+/100 Jeb Dunnuck

Domaine Saint Prefert Chateauneuf du Pape Blanc

2019 Domaine Saint Prefert Chateauneuf du Pape Blanc....$69.99
Another beautiful vintage for this cuvee, the 2019 Châteauneuf Du Pape Blanc (60% Clairette and 40% Roussanne) has a lighter golden hue as well as lively, perfumed notes of lemon curd, crisp pineapple, and white flowers that show more honeyed richness with time in the glass. Beautifully balanced, medium to full-bodied, with perfectly integrated acidity and a dry finish, this has consistently been one of the whites of the vintage over the past handful of years, and the 2019 doesn’t break that trend.
Rated 94/100 Jeb Dunnuck
The 2019 Chateauneuf du Pape Blanc boasts subtle layers of toasted grain and honey over a base of ripe pineapple, nectarine and citrus. A barrel-fermented blend of Clairette and Roussanne, it's medium to full-bodied, plump and generous without being overly rich or unstructured—a nicely balanced yet expansive white that finishes with focus and length.
While well-heeled consumers fight over the limited volumes of the super 2018 Collection Charles Giraud and Reserve Auguste Favier, the smart money will be chasing the regular bottlings of red and white Châteauneuf du Pape.
Rated 90/100 The Wine Advocate

2018 Domaine Saint Prefert Chateauneuf du Pape Rouge....$44.99
Ripe and juicy, this is a well-built version offering up a range of enticing black cherry, plum and fig fruit flavors while singed alder, garrigue and dried lavender notes chime throughout. Ample fruit on the finish with a savory streak providing a nice counterpoint. Grenache, Cinsault, Syrah and Mourvèdre. Best from 2021 through 2032. — JM
Rated 93/100 Wine Spectator
Moving to the 2018s, all of which were tasted from bottle, the 2018 Châteauneuf du Pape reveals a ruby/purple hue and is slightly opaque. Based on 85% Grenache and 5% each of Syrah, Mourvèdre, and Cinsault, it offers a gorgeous perfume of black raspberries, herbes de Provence, ground pepper, candied orange, and a touch of spiced meat. Pure class on the palate, with medium to full-bodied richness and ultra-fine tannins, it has terrific balance, a layered, elegant mouthfeel, and a great finish. This is one thrilling base cuvee to enjoy over the coming decade or more.
Rated 93/100 Jeb Dunnuck
The 2018 Chateauneuf du Pape is a terrific effort from this variable vintage, loaded with rich, ripe flavors of red and purple raspberries, black cherries and oodles of Provençal herbs. It's full-bodied and nearly creamy in texture, with silky tannins that make a subtle appearance on the licorice-tinged finish. Looking even more concentrated and structured than last year, it should drink well for at least a decade.
While well-heeled consumers fight over the limited volumes of the super 2018 Collection Charles Giraud and Reserve Auguste Favier, the smart money will be chasing the regular bottlings of red and white Châteauneuf du Pape.
Rated 92/100 Wine Advocate

2019 Domaine Saint Prefert Clos Beatus Ille Cotes du Rhone

2019 Domaine Saint Prefert Clos Beatus Ille Cotes du Rhone..$26.99
The cherry-scented 2019 Cotes du Rhone Beatus Ille also boasts intricate garrigue shadings, which bring welcome complexity and a slightly savory overtone to the bold, fruity aromas and flavors. It's full-bodied, supple and round in the mouth, with silky tannins on the licorice, rosemary and bay leaf-inflected finish. It should drink well for 3-4 years.

While well-heeled consumers fight over the limited volumes of the super 2018 Collection Charles Giraud and Reserve Auguste Favier, the smart money will be chasing the regular bottlings of red and white Châteauneuf du Pape. The 2019 Côtes du Rhône Beatus Ille is almost as good and.....an even better bargain.

New Riff Distilling’s core Rye whiskey is full-bodied, offering hugely spicy character. Building upon America’s 1897 Bottled-in-Bond Act—already the highest quality standard for aged spirits in the world—New Riff Rye is Bottled In Bond Without Chill Filtration. Featuring a unique mashbill of 95% rye and 5% malted rye, it represents a new riff on our hallowed local Rye whiskey traditions. Aged four years in full-size 53-gallon toasted and charred new oak barrels, there are no shortcuts taken in its traditional production. All New Riff whiskeys are made with the full sour mash Kentucky Regimen; all carry an age statement and are always bottled without chill filtration.

Our distillers learned the black arts of the hardest whiskey in the world to make—the famed 95% Rye—under the direct tutelage of the distiller who mastered it in Indiana, Larry Ebersold of Seagram’s. Taking Master Larry’s instruction in hand, we put a riff on it to the tune of adding 5% malted rye, a unique twist that aids in pulling additional flavors out of the rye and adds a touch of the elegance of malted rye. New Riff Rye is splendid with a splash of water, and of course folds magnificently into classic Rye Manhattan and Old Fashioned cocktails.
