Nugan Estates 2017 Third Generation Cabernet Sauvignon, South Eastern Australia
Australia’s signature red grape is shiraz, also known as syrah in most of the rest of the world. However, the country also produces outstanding red wines made from a variety of other grapes. An important example is cabernet sauvignon, which is the second-most planted red grape in Australia after shiraz. The following cabernet sauvignon reds are made in different styles, but they are both full-bodied food wines that are best enjoyed with beef or other hearty fare.

Description • The big difference between these two wines is that the Nugan Estates is a fruit-driven red, and although it also has some oak aging, the flavor is more subtle. This is a rich cabernet sauvignon that’s refined and well-balanced. It combines the characteristic black currant flavor associated with cabernet along with concentrated ripe red berry fruit, black pepper spice and herbal notes. It also has firm tannins and ends with a long finish.

A blend of 86% Cabernet Sauvignon, 6% Cabernet Franc, 6% Merlot and 2% Petit Verdot, the 2016 Cabernet Sauvignon Poetry needs a little coaxing to begin to unfurl the tightly wound yet exciting scents of blackcurrant cordial, blackberry preserves, warm redcurrants and kirsch plus fragrant nuances of candied violets, underbrush, cigar boxes, menthol and star anise. Full-bodied and built like a brick house in the mouth, the palate features an almost impenetrable structure of super ripe tannins framing the taut, muscular fruit, finishing long. This beauty needs at least 5-6 years to begin to blossom, after which it may well warrant a perfect score.

The Wine and Cheese Place is very pleased to welcome TOM BUSH to the team at our Chesterfield location. Tom was most recently the Wine Director at Balaban’s before it closed a few weeks ago. Before that, Tom was an owner of St. Louis Wine Market and a manager at The Wine Chateau. Beyond his expertise with wine and whiskey, Tom might just be the nicest guy around!

Tom describes how he first got into wine: “Many years ago while celebrating an event in our young lives, my wife Judy and I ordered a half bottle of Chateauneuf du Pape at a French restaurant in Chicago. Our lives were changed forever.”

We have some great projects planned with Tom—such as bringing back our Wine Club—and we intend to have him host a series of wine classes. Stay tuned!

Clear to the eyes with a nose of tart green apples and wet grass, this baijiu has a sweet and earthy palate. Made from premium sorghums, wheat, barley and peas, with natural water from Shaanxi province. After repeated distillation from the same batch made of raw materials, this base liquor is then placed in a container called “the sea of the liquor”. The container itself is key to achieving the unique aromas, as well as the balanced and harmonious flavor. It takes about 3 years of aging before blending and bottling.

Clear to the eyes with a nose of floral elements, this baijiu has a sweet, clean, mellow palate. This strong aroma baijiu is brewed with traditional techniques – made from 50% sorghum and 50% grains (rice, glutinous rice, wheat and corn), with Yufei mineral water, rich in strontium (alkaline earth metal). The product is low in sodium, strongly fragrant, pure and sweet, with a long lasting, smooth body. The tropical fruits and floral notes make it very mixable for cocktails.

The Zisha bottle, grainy and unpolished purple, pays homage to traditional liquor vessels. In fact, Zi-Sha translates to “purple sand”. Bainian literally translates to “hundred years” and is fermented from the mud pits that have continuously producing for over a hundred years. Its quality is exceptional – brilliantly smooth as well as flavorful. Enjoy at room temperature or serve chilled.
