Story Eric Baron took over his father in 1993. He brought his technical knowledge and kept using the traditional methods in the cider factory. His cider is aged in oak casks, dried naturally for 3 months, pressed with a « champagne press ». Many reasons why his organic cider is poured at the French president’s table since 1997. The property is located in the northern part of the French Britanny peninsula. It covers around 20 acres. The cider factory is pretty unique: the alcoholic fermentation happens only in oak barrels. This brings more complexity to the cider, as well as a very subtle vanilla touch. Since Eric took over the property, he has applied and followed organic farming methods. His production has been certified organic by Qualité France.
No Sugar Added. No pasteurization. Harvested in October. Aged 3 months in a dry room. Apples are crushed first and then pressed in a vertical press (from champagne). The alcoholic fermentation in oak casks lasts 4 to 8 months with only natural yeast. This is a long and fine process. Eric does 2 to 3 rakings during the fermentation. A very light filtration is done before bottling. After bottling the second fermentation (prise de mousse) takes 6 to 8 weeks.
Tasting Notes: Beautiful bright‐orange-golden color, the Carpe Diem cuvee develops some aromas of sweet apples, apple skins and wood. The aging in oak cask brings complexity and tannins to this very serious cider. Excellent sweet tannic cider !
