Hermitage Brewing Single Hop IPA Mosaic...$5.99 / 22oz
Released in 2012 for public consumption by Hop Breeding Company, LLC, Mosaic is the most recent addition to our single hop IPA family. This hop varietal is the daughter of Simcoe and another hop varietal derived from Nugget. While Mosaic is primarily used for its aromatic qualities, it can be used for bittering as well.
Flavors include tropical mango, orange blossom and fresh peach or nectarine. It also boasts woodsy and piney elements. At 11-13% alpha acid, the hop bitterness it provides our beer is assertive but short lasting on the tongue, yet it has the bitterness you’d expect from a North American hop variety.
Mosaic hops truly are just that: a mosaic of tastes and aroma for your palate to enjoy. With its fruit-forward notes, it’s also perfect for a summer release.

Hermitage Brewing Single Hop IPA Galaxy...$5.99 / 22oz
It’s not too often we rebrew a single hop IPA, but when we do, it’s because it’s too delicious not to. Thankfully, Galaxy falls into this category. This hop varietal was developed, and is exclusively grown, in Australia. Galaxy was developed from Perle hops bred with a high alpha acid female hop grown in Australia; the resulting hop has an alpha acid content that ranges from 11% – 16%. Galaxy hops are typically used as late additions to accentuate its flavor and aromatic qualities.
As a hop varietal, Galaxy has citrus, peach, and passion fruit flavors. Our IPA has a hop aroma that has a grapefruit-like citrus quality with a slight tropical fruit character. The flavor has grapefruit-like citrus notes and a touch of guava with some stone fruit character. Galaxy has an assertive hop bitterness that lasts well into the finish.

Hermitage Brewing Single Hop IPA Polaris...$5.99 / 22oz
Polaris is the most recent addition to our ever growing line of single hop IPAs. This hop varietal is grown in Hull, Germany and was released to the public in 2012. Polaris is a beast of a hop with an alpha acid content that ranges from 18% – 23%! Despite its high alpha acid content, the hop grower suggests using this hop varietal for its aromatic properties.
Polaris is an interesting IPA. Its aroma is very earthy and has strong garlic/chive/onion qualities that are carried over into its flavor. The finish also has robust resinous character as well.
