Recipe of the Week: Salad Nicoise


Salad Nicoise

Ingredients:
  • 1 Cup Marcona Almonds Chopped   ***
  • 1/4 cup chopped fresh parsley
  • 1/2 cup Nicoise olives    ***
  • 1/2 onion, thinly sliced
  • 1 (6 ounce) can tuna ( we have a fantastic new brand Tonnino Yellow Fin Tuna packed in oil only $4.99 / 5.98oz can)   ***
  • 1/3 pound fresh green beans - rinsed, trimmed and blanched
  • 1/2 pound mixed salad greens
  • 1 cup lemon vinaigrette (juice of one lemon plus zest, ½ Cup Extra Virgin Olive Oil, 1 shallot minced, 1 ½ tsp whole grain Dijon mustard, all whisked together.)
  • 3 hard-cooked eggs, quartered   ***
  • 1 Pound Tomatoes thinly sliced    ***
  • 1 tablespoon capers    ***
  • 4 white anchovy filets    ***

Directions:
- Combine the almonds, parsley, olives, onion, tuna and green beans. 
In large bowl, toss greens with vinaigrette with above mixture. Garnish with eggs, tomatoes, capers and anchovies.
